平時食開嘅朱古力草莓,都係朱古力包住草莓乾。有時朱古力太甜會影響味道,有時草莓乾過酸同朱古力又唔夾。今次呢款朱古力草莓用咗日本新研發技術,將新鮮草莓真空製成草莓乾,再將朱古力注入,完美保留草莓嘅外觀。

第一啖有朱古力既香甜,然後慢慢滲出草莓既微酸,甜得黎又唔會膩。

朱古力草莓是經過採用“含浸法”這種特別的工藝製造而成的。“朱古力含浸食品及其製造方法”於2013年(經過8年4個月)在日本取得專利。

“朱古力草莓”是通過真空加壓的方式,把高粘度的朱古力漿浸透到多孔質的草莓中去。所謂多孔質的草莓,就是通過冷凍乾燥的方法把新鮮的草莓中的水分去除,在草莓的內部創造了一個空間。

草莓的品種有二百多種,但不是所有品種的草莓都可以用來加工成含浸朱古力,含浸朱古力在日本也只有極少的工廠可以製造,是屬於非常稀少的朱古力。含浸朱古力漿的特徵是脫脂乳固體含量在15%以上,而且這種朱古力漿經過一次粉碎之後,再使用濕式粉碎
裝置進行2次粉碎處理,使得它的粒子中徑小於6㎛,還要經過加壓,才能徹底含浸到冷凍乾燥的草莓內部中去。
